Taste, aroma, fragrance, and the color of the used fruits or raw materials are optimally preserved – resulting in a natural and high-quality end product.

    How it works:

    In a continuously aerated alcohol-based liquid (e.g., must, wine, fruit wine, or beer), special acetic acid bacteria convert the alcohol into acetic acid. The process runs automatically and requires only minimal intervention – simple, clean, and reliable.

    Thermoregulation system:

    • Glycol water storage tank, capacity approximately 300 litres, in stainless steel, with thermal insulation in expanded polyurethane and external covering in electro-welded stainless steel sheet, complete with connection pipes and ball valves for manual exclusion, level indicator, upper inspection cover and safety valve
    • Pump for circulating glycol water from the lung
    • Chiller for cooling with 10kW of expressed power
    • Heating barrel connected in parallel to the cooling unit, with 4.5 kW electrical resistance, circulator, exclusion valves and maximum thermostat connected in series to the resistance
